we are a group of non British nationals who would like to start a non-profit association that involves building and volunteering in the communities we are part of, is it possible to do so??

I have not come across any such requirement that the promoters of a non-profit shall be British nationals. To be sure, please visit:

Dear Amaknee

You can set up an unincorporated charity  providing the majority of the Trustees are resident in the UK. In your case it would be advisable to set up an incorporated Charity because the Trustess can be based outside of the UK or be non UK nationals.
